Classic Lentil Soup

A delicious twist on classic lentil soup featuring turkey bacon for added flavor and richness.

Ingredients

  • 1 cup green or brown lentils
  • 4 cups vegetable broth
  • 1 cup chopped turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large pot, sauté the turkey bacon over medium heat until crispy.
  2. Add the onions, carrots, and celery, cooking until softened.
  3. Stir in the garlic, thyme, and cumin, and cook for another minute.
  4. Add the lentils and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for about 30-40 minutes or until lentils are tender.
  6. Season with salt and pepper, and serve warm.

Notes

  • For a vegetarian version, omit the turkey bacon and use additional vegetables.
