  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the ground beef, onion, and garlic over medium heat until the meat is no longer pink.
  2. Add the diced tomatoes and chicken broth; bring to a boil.
  3. Break the lasagna noodles into smaller pieces and add to the pot.
  4. Simmer until the noodles are tender, about 10 minutes.
  5. Stir in the ricotta cheese and half of the mozzarella cheese until well combined.
  6. Season with Italian seasoning, salt, and black pepper.
  7. Serve hot, garnished with the remaining mozzarella cheese.
