Easy Zuppa Toscana Soup

  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 large potatoes, diced
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and crumble it.
  2. Add onions and garlic to the pot, sauté until translucent.
  3. Add potatoes and chicken broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in kale and heavy cream, cook for an additional 5 minutes.
